A dairy is a facility for the extraction and processing of cows milk and other
farm animals, for human consumption. A dairy farm produces milk and a dairy
factory processes it into a variety of dairy products. Corner stores in New
Zealand are called Dairies due to the abundance and importance of dairy products.
Almost one third of all New Zealand dairy farm herds are located in the Waikato / South Auckland region. 85 percent of dairy farms are located in the North Island with Taranaki being the second most heavily populated region at 16.3 percent. South Island dairy farms account for 17.9 percent of the national total.
With the restructuring of the NZ dairy industry, a single company (Fonterra) now covers over 95% of the country's milk production.
